Bhaat: rice
Bhagar: a "tempering" technique of frying whole spices in hot oil and add the entire concoction to an almost finished dish for a final pop of flavor. Others may refer to this as phoron,chaunk or tarka.

Desi/Deshi: Des/desh means land and people from the Indian subcontinent (whether they be from Bangladesh or Nepal or in between)refer to themselves and their culture as desi.

Jamaii: son-in-law.

Panch Phoron: A Bengali whole spice blend made up of equal portions of five different seeds --cumin, fennel, mustard, nigella and fenugreek.
